About Our Truly Authentic Neapolitan Pizza
We felt that in order to make an authentic Neapolitan pizza, it was necessary to replicate the time-tested procedures, equipment, and ingredients of Naples pizzerias. The 3 most important ingredients are the varieties and quality of the tomatoes, the cheese, and the flour for the dough.
We use a 00 (double zero) milled imported flour with a natural gluten level between 11% and 12%. It has been made by the Caputo family for 3 generations from individually selected grains. Many of the flour mills bulk up the gluten content of their flours to as much as 16%, which creates a very chewy and elastic dough that is heavy on the plate and therefore heavy on the stomach. Caputo family flour is diligently tested, not for elasticity, but extensibility.
It makes sense that a house is only as good as the foundation on which it is built, so we started the foundation of a truly authentic Neapolitan pizza with only the best ingredients.
